Ingredients
  • 680g ripe tomatoes, preferably heirloom varieties
  • 225g fresh mozzarella cheese, preferably buffalo mozzarella
  • 30g fresh basil leaves
  • 60ml best quality extra virgin olive oil
Instructions
  1. Slice 680g ripe tomatoes into 1cm (1/2-inch) thick rounds. Arrange on a serving platter and season lightly with salt and freshly ground black pepper.

  2. Slice 225g fresh mozzarella cheese into rounds of similar thickness to the tomatoes.

  3. Arrange mozzarella slices alternating with tomato slices on the platter, slightly overlapping.

  4. Tuck 30g fresh basil leaves leaves between and around the tomato and mozzarella slices.

  5. Drizzle generously with 60ml best quality extra virgin olive oil, allowing it to pool slightly around the edges.

  6. Let stand at room temperature for 15-20 minutes before serving to allow flavors to meld.

  7. Serve with crusty bread if desired.
