  • 600g cod fillets, skinless
  • 8 slices bacon strips, not thick-cut
  • 500g fresh green beans, trimmed
  • 3 tbsp olive oil
  • 30g butter, melted
  • 3 cloves garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh thyme leaves
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 30g fresh parsley, chopped
  • 1 lemon lemon wedges for serving
Instructions
  1. Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.

  2. Pat 600g cod fillets dry and season with 1 tsp salt, ½ tsp freshly ground black pepper, 1 tsp paprika, and ½ tsp garlic powder.

  3. Wrap each cod fillet with 2 8 slices bacon strips, securing with toothpicks if needed. Place on one side of the prepared baking sheet.

  4. Toss 500g fresh green beans with 3 tbsp olive oil, 3 cloves garlic cloves, 1 tbsp fresh thyme leaves, and season with salt and pepper. Arrange on the other side of the baking sheet.

  5. Drizzle {melted_butter} over the bacon-wrapped cod and sprinkle with 1 tsp lemon zest.

  6. Bake for 18-20 minutes until bacon is crispy and cod flakes easily with a fork (internal temperature 63°C/145°F).

  7. Remove from oven and immediately drizzle 2 tbsp fresh lemon juice over both the cod and green beans.

  8. Garnish with 30g fresh parsley and serve with 1 lemon lemon wedges for serving.
