  • 4 pieces (200g each) boneless, skinless chicken breasts
  • 45ml za'atar spice blend
  • 60ml extra virgin olive oil
  • 2 whole lemons, juiced and zested
  • 120ml plain Greek yogurt
Instructions
  1. Preheat oven to 200°C (400°F). If 4 pieces (200g each) boneless are thick, pound to even thickness (about 2cm/3/4-inch) for uniform cooking.

  2. In a small bowl, mix 45ml za'atar spice blend with 60ml extra virgin olive oil and half the 2 whole lemons juice to create a paste. Reserve remaining lemon juice for the yogurt sauce.

  3. Place chicken breasts on a lined baking sheet. Season with salt and pepper, then rub the za'atar mixture all over both sides of the chicken, using all of it.

  4. Roast for 20-25 minutes, or until internal temperature reaches 74°C (165°F) and juices run clear. The top should be golden with slightly crispy edges.

  5. While chicken cooks, mix 120ml plain Greek yogurt with remaining lemon juice and zest. Season with salt to taste.

  6. Let chicken rest for 5 minutes before serving. Slice and serve with a dollop of lemon yogurt sauce.
