- 45ml za'atar spice blend
- 60ml extra virgin olive oil
- 2 whole lemons, juiced and zested
- 120ml plain Greek yogurt

Preheat oven to 200°C (400°F). If 4 pieces (200g each) boneless are thick, pound to even thickness (about 2cm/3/4-inch) for uniform cooking.

In a small bowl, mix 45ml za'atar spice blend with 60ml extra virgin olive oil and half the 2 whole lemons juice to create a paste. Reserve remaining lemon juice for the yogurt sauce.

Place chicken breasts on a lined baking sheet. Season with salt and pepper, then rub the za'atar mixture all over both sides of the chicken, using all of it.
