Ingredients
  • 600g large shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into noodles
  • 60g butter
  • 2 tbsp extra virgin olive oil
  • 6 cloves garlic cloves, minced
  • 125ml dry white wine
  • 60ml fresh lemon juice
  • 1 tbsp lemon zest
  • ¼ tsp red pepper flakes
  • 60g fresh parsley, chopped
  • 60g Parmesan cheese, grated
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
Instructions
  1. Pat 600g large shrimp dry and season with 1 tsp salt and ½ tsp freshly ground black pepper. Set aside.

  2. Using a spiralizer or vegetable peeler, create noodles from 4 medium zucchini. Lay on paper towels and lightly salt. Let sit 10 minutes, then pat dry.

  3. Heat 2 tbsp extra virgin olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2 minutes per side until pink and cooked through. Remove to a plate.

  4. In the same skillet, melt 60g butter over medium heat. Add 6 cloves garlic cloves and ¼ tsp red pepper flakes, cooking for 1 minute until fragrant.

  5. Pour in 125ml dry white wine and 60ml fresh lemon juice. Let simmer for 2-3 minutes to reduce slightly.

  6. Add zucchini noodles to the skillet and toss for 1-2 minutes until just heated through and slightly softened.

  7. Return shrimp to the skillet along with 1 tbsp lemon zest and half the 60g fresh parsley. Toss gently to combine.

  8. Remove from heat and sprinkle with 60g Parmesan cheese and remaining parsley.

  9. Serve immediately while hot.
