  • 4 large boneless, skinless chicken breasts

Instructions
  1. Preheat oven to 190°C (375°F). Using a sharp knife, cut a horizontal pocket into the thickest part of each 4 large boneless, being careful not to cut all the way through.

  2. Season the inside and outside of the chicken breasts generously with salt and pepper.

  3. Stuff each chicken breast with slices of 200g fresh mozzarella, 200g cherry tomatoes, and 30g fresh basil leaves leaves. Secure the opening with toothpicks if needed.

  4. Heat 3 tbsp extra virgin olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.

  5. Transfer the skillet to the preheated oven and bake for 15-18 minutes until internal temperature reaches 74°C (165°F) and juices run clear.

  6. Remove from oven and let rest for 5 minutes before slicing. Remove toothpicks before serving. Drizzle with any pan juices.
