- 500g beef sirloin, sliced thin against the grain
- 600g fresh broccoli, cut into florets
- 80ml low-sodium soy sauce
- 3 tbsp oyster sauce
- 3 tbsp vegetable oil for cooking
Instructions
-
Heat 1 tablespoon of 3 tbsp vegetable oil for cooking in a large wok or skillet over high heat. Add 600g fresh broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp. Remove to a plate and set aside.
-
Add remaining 2 tablespoons of 3 tbsp vegetable oil for cooking to the same pan. Add 500g beef sirloin and stir-fry for 2-3 minutes until browned and nearly cooked through.

In a small bowl, whisk together 80ml low-sodium soy sauce and 3 tbsp oyster sauce until combined.

Return the cooked broccoli to the pan with the beef. Pour the sauce mixture over everything and toss to coat.

-
Remove from heat and serve immediately over steamed rice or noodles.
Tips
Beef Preparation: Slice beef very thinly against the grain for maximum tenderness. Partially freezing for 30 minutes makes slicing easier.
High Heat Cooking: Use the highest heat your stove allows and don't overcrowd the pan - this ensures proper searing and prevents steaming.
Broccoli Texture: The broccoli should be bright green and still have some crunch when finished. Overcooking makes it mushy.
Sauce Balance: The combination of soy sauce and oyster sauce provides the perfect sweet-salty flavor without needing additional seasonings.
Serving Suggestions: Perfect over jasmine rice, brown rice, or lo mein noodles. Garnish with sesame seeds or sliced green onions if desired.
Make-Ahead: Prep all ingredients ahead of time since the actual cooking happens very quickly - have everything ready before you start.
