- 60ml water
- 1 fresh mango, diced for topping
- 30g toasted coconut flakes

Line a 9x9 inch (23x23cm) square pan with parchment paper, leaving overhang for easy removal.

Mix 200g graham crackers, 85g unsalted butter, and 2 tbsp brown sugar for crust until evenly combined. Press firmly into bottom of prepared pan. Refrigerate while making filling.

Sprinkle 7g unflavored gelatin over 60ml water in a small bowl. Let bloom for 5 minutes, then microwave for 15 seconds to dissolve. Let cool slightly.

In a large bowl, beat 680g cream cheese until smooth and fluffy, about 3 minutes. Gradually add 200g powdered sugar, beating until combined.

In a separate bowl, whip 250ml heavy cream to soft peaks.

Add 250ml fresh mango puree (about 2 large mangoes), 1 tsp ground turmeric, 2 tsp vanilla extract, 2 tbsp fresh lime juice, 1 tsp lime zest, and dissolved gelatin to cream cheese mixture. Beat until smooth.
