Instructions
  1. Line a 9x9 inch (23x23cm) square pan with parchment paper, leaving overhang for easy removal.

  2. Mix 200g graham crackers, 85g unsalted butter, and 2 tbsp brown sugar for crust until evenly combined. Press firmly into bottom of prepared pan. Refrigerate while making filling.

  3. Sprinkle 7g unflavored gelatin over 60ml water in a small bowl. Let bloom for 5 minutes, then microwave for 15 seconds to dissolve. Let cool slightly.

  4. In a large bowl, beat 680g cream cheese until smooth and fluffy, about 3 minutes. Gradually add 200g powdered sugar, beating until combined.

  5. In a separate bowl, whip 250ml heavy cream to soft peaks.

  6. Add 250ml fresh mango puree (about 2 large mangoes), 1 tsp ground turmeric, 2 tsp vanilla extract, 2 tbsp fresh lime juice, 1 tsp lime zest, and dissolved gelatin to cream cheese mixture. Beat until smooth.

  7. Fold whipped cream into mango mixture in three additions until just combined.

  8. Pour filling over crust and smooth top. Refrigerate for at least 4 hours or overnight until set.

  9. Before serving, top with 1 fresh mango, 30g toasted coconut flakes, and 60g chopped pistachios.
