  • 45g unsalted peanuts, chopped (optional)
Instructions
  1. Line a 24-cup mini muffin tin with paper liners or lightly grease with coconut oil.

  2. In a medium bowl, whisk together melted 120ml coconut oil, 120ml natural peanut butter (no sugar added), 60g powdered erythritol or monk fruit sweetener, 45ml unsweetened cocoa powder, 5ml pure vanilla extract, and 1.25ml fine sea salt until smooth and well combined.

  3. If using, fold in 60g sugar-free dark chocolate chips (optional) and 45g unsalted peanuts.

  8. Serve chilled. Let sit at room temperature for 2-3 minutes before eating if very firm.

Tips

Coconut Oil Temperature: Use melted but not hot coconut oil. If too hot, it can separate from other ingredients.

Sweetener Choice: Powdered erythritol dissolves better than granulated. Monk fruit sweetener works well too, but start with less as it's sweeter.

Peanut Butter Type: Use natural peanut butter without added sugars or oils. Stir well before measuring if oil has separated.

Texture Preference: For smoother fat bombs, blend all ingredients in a food processor until completely smooth.

Storage: Keep refrigerated for up to 2 weeks or freeze for up to 3 months. They soften quickly at room temperature.

Carb Count: Each fat bomb contains approximately 2g net carbs and 8g fat, perfect for maintaining ketosis.

Portion Control: These are calorie-dense treats meant to provide quick energy and satisfy cravings. One or two is usually sufficient.

Variations: Try almond butter instead of peanut butter, or add coconut flakes, cinnamon, or espresso powder for different flavors.
