Instructions
  1. In a large bowl, whisk 500g mascarpone cheese and 80g powdered sugar until smooth and fluffy, about 2 minutes. Don't overmix.

  2. Pour 250ml strong espresso or coffee into a shallow dish. Quickly dip each 200g ladyfinger cookies (savoiardi) into the coffee, turning once, until soaked but not falling apart.

  3. Break soaked ladyfingers into pieces and divide half among 6 glasses or clear cups.

  4. Spoon half the mascarpone mixture over the ladyfingers in each cup, spreading gently to cover.

  5. Repeat with remaining coffee-soaked ladyfingers and mascarpone mixture, creating two distinct layers.

  6. Cover each cup with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

  7. Just before serving, dust the tops generously with 30ml unsweetened cocoa powder for dusting using a fine-mesh sieve.
