Ingredients
  • 4 large ripe mangoes, peeled and cubed
  • 150g caster sugar
  • 60ml fresh lime juice
Instructions
  1. Place 4 large ripe mangoes in a food processor or high-speed blender. Process until completely smooth and pureed.

  2. Add 150g caster sugar and 60ml fresh lime juice to the mango puree. Blend until sugar is completely dissolved and mixture is smooth.

  3. Taste and adjust sweetness or lime juice as needed - the mixture should be slightly sweeter than desired as freezing dulls sweetness.

  4. Pour mixture into a shallow, freezer-safe dish and place in freezer.

  5. Every 45 minutes for the first 3 hours, remove from freezer and vigorously stir with a fork to break up ice crystals.

  6. After 3 hours of stirring, let freeze completely for at least 2 more hours until solid.

  7. Before serving, let sorbet sit at room temperature for 5-10 minutes to soften slightly for easier scooping.

  8. Serve in chilled bowls, optionally garnished with fresh mint leaves or lime zest.

Tips

Mango Ripeness: Use very ripe, fragrant mangoes for the best flavor and natural sweetness. They should yield to gentle pressure.

Sugar Dissolution: Make sure sugar is completely dissolved to prevent grittiness in the final sorbet.

Lime Balance: The lime juice brightens the mango flavor and prevents the sorbet from being too sweet.

Stirring Technique: Vigorous stirring every 45 minutes prevents large ice crystals from forming, creating smoother texture.

Ice Cream Maker: If you have an ice cream maker, churn according to manufacturer's instructions for even smoother results.

Storage: Store covered in freezer for up to 1 month. Let soften slightly before scooping if very hard.

Serving Ideas: Beautiful served in chilled glass bowls or as a palate cleanser between courses.
