- 2 large medium zucchini, grated
- 2 whole large eggs, beaten
- 85g Parmesan cheese, grated
- 60g fine almond flour
Instructions

Grate 2 large medium zucchini using a box grater or food processor. Place in a clean kitchen towel and squeeze firmly to remove as much moisture as possible.

In a large bowl, combine the drained zucchini, 2 whole large eggs, 85g Parmesan cheese, and 60g fine almond flour. Mix until well combined and season with salt and pepper.

Heat enough oil to cover the bottom of a large skillet over medium heat.

Drop spoonfuls of the zucchini mixture into the hot oil, flattening slightly with the back of the spoon to form patties.

Cook for 3-4 minutes until golden brown and crispy on the bottom, then flip and cook for 2-3 minutes more until golden on both sides.
