Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

If 24 large Medjool dates aren't already pitted, make a small slit lengthwise and remove pits, being careful not to tear the dates completely open.

In a small bowl, mix 120g goat cheese with 5ml fresh thyme leaves and a pinch of to taste freshly ground black pepper. If using 60g walnuts, fold half of them into the cheese mixture.

Stuff each date with about 1 teaspoon of the goat cheese mixture, pressing gently to close.

Wrap each stuffed date with half a strip of 12 strips thin-cut bacon, securing with a toothpick if needed.

Arrange on prepared baking sheet, seam-side down. Brush lightly with 30ml honey.
