- 1 large French baguette, sliced diagonally into 2cm (3/4 inch) thick pieces
- 60ml extra-virgin olive oil, divided
- 2 cloves garlic cloves, halved
- 450g cherry tomatoes, diced small
- 225g fresh mozzarella cheese, diced small
- 45ml fresh basil leaves, chiffonade cut
- 30ml balsamic glaze or reduction
- 2ml sea salt
- 1ml freshly ground black pepper
- 1ml red pepper flakes (optional)

Preheat your oven to 200°C (400°F). Arrange 1 large French baguette slices on a large baking sheet and brush both sides lightly with half of the 60ml extra-virgin olive oil.

Toast in the oven for 4-5 minutes, flipping halfway through, until golden brown and crispy. Remove and immediately rub one side of each slice with the cut 2 cloves garlic cloves cloves while still warm.

In a medium bowl, combine 450g cherry tomatoes, 225g fresh mozzarella cheese, 45ml fresh basil leaves, remaining 60ml extra-virgin olive oil, 2ml sea salt, 1ml freshly ground black pepper, and 1ml red pepper flakes (optional) if using. Toss gently to combine and let stand for 10 minutes to allow flavors to meld.

Just before serving, spoon the tomato-mozzarella mixture generously onto each garlic-rubbed toast slice. Don't top too far in advance or the bread will become soggy.
